I want to permanently disable my touchpad - managed to disable it in xinput, but on next startup it’s active again.

Have you checked if you can disable it in BIOS/UEFI?

I don’t know if this is the right way, but one way would be to create a systemd
unit that runs on startup that runs the command to disable the touchpad…
If you use KDE, there is an option in Settings–> Input Devices–> Touchpad to disable touchpad.
