Remove manjaro-gdm-theme package. That will default to the upstream GDM. If you want more than that, then you have to do this:

In gnome-layout-switcher, there is also the button to remove manjaro branding. It removes the the patched green gdm, from which the color is inherent from.

so if I remove the manjaro themes what takes its place?

Then manjaro themes get removed. But the green accent color in gnome shell shall remain.
