Yup.
You will still be able to mount the drive … it just wont be mounted automatically at login and the system wont expect it to always be there.

Yes, ventoy will format your USB with two partitions, one is EFI for booting, the other is called ‘ventoy’ for ISOs and any random files. Booting from it will list all the ISOs in a GRUB menu, all your other files are available for copying. Just make sure your BIOS is configured to boot from UEFI first and legacy second.
