Without more information it could be anything, including your video drivers.
But it is just as likely that VLC defaults arent working well and you would get better results from changing the engine or backend or whatever. (I forget the exact option paths … there are old threads on it)
But also … you could probably just install an mpv or mplayer frontend and get a better experience right away. I like smplayer.
