Iāve had the same issue. Hereās what I did in the Thunderbird UI. I have no idea what underlying configuration change is done because this seems identical to how this was set up before.
If it helps anyone, I had this exact problem on my motherās computer today and hereās the solution that worked for me (with KDE Plasma though).
I had installed Thunderbird in English. I then changed the language to French.
It is at this point that hyperlinks were tested and didnāt work.
I tried a lot of things (default applications, mimetype files, etc.) but this is what I did that actually fixed the problem: I switched the language back to English, then back to French.
I have no idea why this did the trick, but the hyperlinks are now working.
Rebooting might also have solved your issue.
