For some reason my taskbar menu icon changed from the manjaro logo to a mouse. and the UI is different. Im not sure how this happened is this a recent update or something but what could I have done to have changed this. For context I recently reinstalled Manjaro and installed new kernel headers so my network card could work. otherwise Im just not sure. Is it anything to worry about?

You could certainly modify the theme and icon theme that suit your preferences, no ?
As @yannssolo pointed out:
- the taskbar menu icon is tied to your icon theme – the mouse is the Xfce logo
- the overall UI colors are tied to your theme, although the positioning of the taskbar and its components are user configuration
