Why are there recently so many Kernel Updates? Even twice a day.
6.6.4 was released on 03.12.23

Since you are on the Unstable branch, you should be expecting this. It is to be expected.
Kernels are not developed by Manjaro itself, so any updates come from a third party.

Why? - Developers apply patches to fix bugs on some machines, and imagine, these patches may or may not work, so they can be added, reverted, removed, modified, and each time it requires a rebuild.
