I both print (every now and then) as well as export to PDF (almost daily) with fresh and I have no problems whatsoever.
I might be wrong, I’m first to admit, but that, at least to me, inddicates either:

I think this has something to do with it. Try:
pkill soffice.bin
…and then trying again…
Are you trying to save these documents either to or from a network location when the crash occurs?
I am trying to save the files to local SSD.
What happens when you try to save them to a local filesystem, as in your home directory/Documents
In my home directory and folder documents, my letters are saved.
I try to save to this directory and documents.
I had to reinstall Manjaro and now save as and export tp pdf works.
Something was damaged in the base system of the installation.
While not impossible, I think that’s unlikely. a Faulty user configuration is much more likely.
But what do I know?
