Does that mean that if there is a new LTS kernel (example: 5.8x) and I did a complete update on my setup, my kernel will get updated to 5.8x or will it stay on the current version (which I believe is 5.4x).

It always makes sure you have the latest LTS installed (and modules configured for it, etc).
Its also just a package that pretty much does pacman/update hooks … you can easily remove it later and/or install whatever kernels you want through mhwd-kernel
/manjaro-settings-manager like regular. You wont be locked in … so no stress in any case.
