I am not an expert user with experience in KDE Plasma and I have currently installed the stable version of Manjaro with KDE Plasma 6 for a week now and I noticed that this version comes by default using X11. I would like to know how I can switch from using X11 by default to using Wayland by default.
There is an option in the bottom left corner of the SDDM login screen where you can select a Wayland or x11 session. You will have the same session until you change it back.
Note: If you have auto-login enabled, you’ll need to log out of your current Plasma session to see this.

as @BG405 wrote, this is an option in the lower left corner of the login screen.
Whatever you choose there during next login, it remains the default until you change it again the same way.
There is a way of switching to Wayland (or back to X11) if auto-login is enabled. The setting is hidden in System Settings.
Go to System Settings / Colors & Themes / Login Screen (SDDM) and look for the Behavior… link at the top of the window.
Click Behavior to see the Automatically log in line where you can use the drop down to select the session for Plasma (X11) or Plasma (Wayland)
Click Apply and the next time you Automatically log in, the session will be as selected.
@owburp Logout is available via the menu. You might not see it unless you have it wide enough to show all options.
Oh, bitter irony
Typographical errors… the scourge of the modern world.
Somewhat misplaced under the Colours & Themes hierarchy, in my opinion, but it certainly exists. I’d prefer to see it more logically placed, below Session.

Thanks to everyone for their answers but the best answer and the one that really cleared my doubts completely was this one. With this I was able to set the Wayland session as the default session (I use automatic login without using a password)
Side note:
The settings in Plasma 6 are less intuitive as it was under Plasma 5. That’s my own experience
There’s always room for improvement. Finding someone willing to make those improvements in a timely fashion isn’t always easy.
Someone in the development team seem to be happy with it, otherwise it wouldn’t have been designed that way.
But that’s very common. Developers always find their system best designed. Happens in all areas, not only in a GUI development.
They would need to ask thousands of people about it to find out if happy or not.
At the end you can’t fulfill everyones expectations, that’s a mission impossible.

Why is this so complicated or unintuitive?
I’m really curious why folks (complain) like to go through long paths of menu items to reach anything when there’s a search.
Better still, KRUNNER: type ‘Login screen’.
Just as I am curious how someone easily finds an option using a GUI based Search, without knowing what the thing is called.
There must certainly be many (particularly newer) users that fit that general profile. Likewise, there must be many who prefer the visual experience of recognising an icon found beneath a logical hierarchy.
For those, in particular, a better (more intuitive) menuing layout would be beneficial, no matter the GUI.
I’m amused by a fairly common search-flow by (mainly Windows) users;
1. Vaguely look through various dialogs.
2. Open their favourite browser and Search Engine.
3. Type (paraphrasing) “How do I do this thing?”
4. Random site’s advice “Open Windows Search and type …”
5. …
