This is extremely subjective.
The best advice is to tell you to do your homework, and maybe most importantly - just try them out. Create a ventoy usb, download the ISOs you are interested in, and drop them all onto the ventoy partition of the USB. The live environment should be more than adequate to get a feel for the desktop or window manager.

Besides your personal opinion which should be important, for sure.
But it also could help to use a Desktop Environment which is also the most used. When you face a problem you probably get more support help from a wide range of user’s.
Most famous should be Plasma>XFCE>Gnome, i guess? And then comes the community DE’s.

For a starter, one of the 3 officially supported. They are, well supported from the manjaro team and not just 1 individual, and they are mostly used so there is a lot of already answered common questions in the forum.
Which one is a matter of preference - put all 3 flavours on a ventoy drive, boot each of them and click yourself around. XFCE is the most stale in development, which means, no new features - no new bugs. The other two are more modern, but very different in concept. Plasma is the most customizable, which is however not advised for novice users because the custom configs are what breaks most of the time. So as a novice stick with defaults.
