I ran a big update, and it included Handbrake 1.8.0. The new version of Handbrake includes an upgrade from Gtk3 to Gtk4. Now, some of the dialog box text is not showing up unless I hover over it with my mouse. I had a similar problem with Pamac, but I’m not sure which files needs to be replaced for Handbrake to work.
I have added the gnome tag, because it seems from the screenshot it a problem specific to gnome. The version 1.8.0 works on my xfce.
I’m using MATE.
