Gsettings set org.gnome.desktop.interface color-scheme prefer-dark Doesn't work for every application

I am aware that with the recent update some application no longer respect the dark theme; so I executed gsettings set org.gnome.desktop.interface color-scheme prefer-dark which has worked, eg, for gnome-disks; however I have another application which doesn’t get the dark theme: ghex:

Also doesn’t respect the theme if I launch it as
sh -c "GTK_THEME=Greybird-dark ghex"

I am on Xfce, using Greybird-dark theme.
