I have read that the recent XFCE update has custom scaling. When I go to settings → appearance-> settings, windows scaling only has 1x & 2x. 2x is way too large. how can I set it to 1.25? I’m a newb to XFCE so any help would be appreciated.

You mean this? What is the output of xfce4-about?

Maybe you can try setting custom DPI?
Go to Appearance - Fonts - Custom DPI Settings
