Tras desinstalar zsh, reinicié mí computador y ya no tenía mí usuario, no hay usuarios. Me pide un usuario y contraseña, los coloco pero nada, ¿debería modificar mí grub agregar un usuario?

Lo segundo, es que dices que has desinstalado zsh, pero tu usuario sigue estando configurado para usar ese shell. Si ya no está instalado, pues no te va a dejar entrar. Tienes que cambiarlo con el comando chsh:
chsh -s /bin/bash gabriel

Bash is telling you that it does’t find the command append_path. I suppose you have that command in your start scripts, but it seems that it’s not defined.
