A standalone app, or a settings panel? I’ve found a few instructions for configuring it through the command line but I prefer a GUI where I can easily see the settings without having to remember some commands I only use once every few years (also people seem to be struggling, as I am, to get it working through the CLI).

Yeah, all it finds is a viewer and a server browser, nothing for configuring a local server.
try remmina, you might have to install add ons.
use the add/remove software so it asks if you want.
It sounds like that’s just a client, not a server?
the server is the listen option in the dropdown.
