and several others saying “HDMI surround” and “HDMI stereo” all unavailable and unplugged

looks like the firmware for your sound card is missing. checked a bit with your model it has no reference of the actual model of the sound chip(sound codec) used. if you do find, you can use the following index to manually load the module by creating file /etc/modprobe.d/sound-card-module.conf containing;
options snd-hda-intel model=<model>

if you expect the driver to be delivered running the latest kernel would be a must. running 5.15 would not cut it

as last ditch effort try load the module by creating file /etc/modprobe.d/sound-card-module.conf containing following and reboot;
options snd-hda-intel model=auto

try alsamixer in a terminal use f6 to use your sound card make sure nothing is muted
Press f6 and choose your sound card
I would guess spdif perhaps connects to pro audio, can you in pavucontrol select spdif?

Maybe I am wrong, but snd_hda_intel might be wrong here… your sound card needs the driver:
sof-audio-pci-intel-cnl
Since kernel 5.12 … so use 5.15
but from what I see:
snd_hda_intel is loaded since the alternative would be: snd_sof_pci what indicates that the firmware is not there.
Anything in the journal?
journalctl --boot 0 --dmesg --no-pager
journalctl --boot 0 --dmesg --grep snd --no-pager
