You can use more than one.
The first one is the one which gets used all the time.
Only when it fails will the next one be used.
(there is a timeout which I don’t know how long and whether or where it is configurable)
In practice this means that the second one rarely if ever gets used, because the timeout till the second one is used makes the connection very slow and you will not wait long to look for the cause and fix it.

If you integrate for instance dnsmasq in your setup, DNS queries can be cached locally - an address has to be looked up remotely only once (slower), then it comes from the local cache (fast)
improving the overall speed even though your nameserver might be slow to respond.
