My current (Intel Core i3) laptop has 4 CPUs in System Monitor; which newer Intel laptop CPUs have even more than 4? Also: can system monitor observe GPUs the same way as it observes CPUs?

If your system has the right sensors, and the required plugins to monitor all your sensors, then yes.
With Intel, you can use intel_gpu_top
or more generic nvtop
.
However, I’m not convinced their output is necessarily useful.
Because you mentioned “System Monitor” I might think you are on KDE.
In that case there are plugins you can add to System Monitor, such as GPU utilization, etc.:
