I think it should use only < 50 MB of RAM
In my case, it use more than 150MB of RAM
seems normal to me, it doesn’t claim to be lite.
you have a lot of widgets on there?
50MB is very low. Especially if you have all kinds of widgets/modules/sub docks running, there. So 150MB looks reasonable.
50 MB is probably impossible to achieve. My minimalistic configuration (no addons, only simple autohide icon dock) eats about 90 MB and it’s perfectly normal.
Good old Cairo-Dock eats 100MB as well.
But for me latte dock is use more than 400mb ram

And you said you like the customisation, so I’m assuming you have many things on there.
Get rid of the customisations…
