Sorry, downgrading packages is never a solution. It should only be a temporary workaround while waiting for a bug fix, perhaps. Plymouth is mostly eye candy and slightly increases boot time. Remove it if you don’t want it. It should never prevent a successful boot. You most likely have underlying issues that also affected Plymouth during the failed boot.
