I’ve been seeing messages to use keyrings for a while, and I always cancel them, but I’ve reached the point where I would rather figure out how to completely remove the keyrings than seeing a single message like that again. How can I do that?

You don’t. That’s where the system stores necessary certificates and keys.
The prompt you are seeing to unlock the keyring can either use the same password as your user so the keyring is unlocked upon logging in, or you can click OK to use a blank password (which is obviously not secure).
