I wanted to switch from 5.6.19_rt12-3 to 5.7.19-2 how do I fix this?

Using MHWD Kernel to install another kernel, or from terminal. My proposal is to go with 5.4 as is LTS or 5.8 …
sudo mhwd-kernel -i linux54
then reboot into it.
