Now try updating again, from the terminal:
sudo pacman -Syu
…and post the output, again regardless whether successful or not.
See if you can uninstall ninja using yay.
Then, again try pamac update --aur
… and again post the output.
If you still need ninja it can be installed again later from the official repo:
sudo pacman -S ninja - not from the AUR.

Probably because some other AUR package wants this specific version.
You have to go back the chain - what AUR package(s) do you actually need?
So it means removing them all together. I could delete all AUR packages and try installing them again.
That is what I’d do.
Make a note what you wanted - and know why - and that this could not also be had from normal repos.
pacman -Rns package_name
But be careful and inspect the list before you commit to removing what it proposes to remove.

The list of things that are pulled in as dependencies, which could replace the packages from the “normal” repo - and give you trouble later.
No experience with it. At least it won’t mess with your system as these are self contained.
But they may not integrate perfectly with the rest of the system.

While nothing is ever guaranteed, any given package from the official Manjaro repositories (non-AUR) will have the highest likelihood of being trouble-free.
Alright, thats good to know.
I will also go and delete my AUR packages and see what happens if I try to re-install them.

gnome-terminal-fedora might be a replacement which is in the official repos
First try to find what you want in the official repos - this is not static, it changes over time.
What you could only have from AUR a year ago might be in the official repo now - and vice versa.
And you get to keep all the potential problems that may come with the decision to use some AUR package.
You might start with cargo (dabbling in a little rust, I see), as that is failing to build currently. meson, usd, ninja and likely many others are best installed from the repo’s - obviously, if there’s a something-bin from the AUR, it will most likely just be something in the repo.
Now that yay is once again viable, use only that to remove any AUR packages, not Pamac-Manager (GUI).
There is no pacman GUI - this is pamac.
And this is apparently still the original error.
Why would you want pacman-git?
pacman is a core package and you should not replace it with one from AUR.
