Turns out my problem was the exact same problem as
It was the mt7921e driver misbehaving, and the system crashes that I chalked up to the newest kernel were also linked to this. This card often failed to show up as was the case when I was initially diagnosing the problem.
I fixed the problem by throwing out the mediatek card and installing an AX210NGW intel wifi 6E card as this seems to be a persistent and long running compatibility issue.
Things seem to be working fine for now. Thanks for all the help!
